Back in April (2007), I tried out a clam recipe but it did not turn out the way I wanted. The main problem was that the broth was a bit bitter. Most likely the problem was that the white wine did not cook off properly. Today I tried the same recipe again but this time, I changed a couple of steps.
- I used a better type of butter (more fat!)
- I did not let the butter turn brown by cooking it on the lowest heat setting on the stove
- I skipped the bacon/ham
- I let the broth cook for a while, smelling the broth until most of the alcohol is gone
- Added a cup of water to the mussels
That did it. No bitter taste nor aftertaste. It tasted just right but I may try to use half a cup of water next time.
